Brown Street Grill will be helmed by Stuart Laws, one of WA food’s most steadfast champions. With over 25 years as a chef, he previously founded Showcase Events WA – a catering and events management company that (fittingly for its name) showcased some of the state’s best local and seasonal produce.
“We are blessed in WA with a huge beautiful state that produces exceptional produce all year round. We need to be proud of it, we need to showcase it and we need to support our farmers, they work really damn hard to put food on our plate. Chefs are the conduit between the farmer and the consumer. It’s our job to tell their story and that’s what I want to do,” he said.
In this new venture, Laws will be turning his hand to local produce like Black Label Berkshire pork, Stirling Ranges beef, Bookara Goat Dairy, mushrooms from The Mushroom Guys and prawns from Skull Island, to name just a few. Much of this stellar produce will be cooked using the first Mesiano wood fired pizza oven in WA, and a custom charcoal grill from Bakers Hill’s JAGRD.
The menu ranges from beer-appropriate snacks and small plates perfect for sharing, up to larger dishes with highlights including Abrolhos octopus with black lentil puree, black barley salsa and romesco, or boneless half chicken with miso corn and cucumber salad, as well as plenty of vegetarian options.
Brown Street Grill is scheduled to open on Wednesday, November 10, and will be located inside Bright Tank Brewing Co, at 100 Brown Street, East Perth.
