Single Malt In The Swan Valley: Giniversity And Limeburners Are Coming To The Swan Valley

Helmed by Hall of Fame Master Distiller Cameron Syme (and the man behind WA’s first legally produced single malt whisky), the new location will be a cellar door for the two spirits, with their existing distilleries in the Great Southern and Margaret River region remaining open. As well as the cellar door, the 200-seat venue will feature a bar, restaurant and functions space – plus Giniversity and Limeburners interactive blending experiences on offer.
Syme says, “I have wanted to share my products in the city for a while now, but we had to find the right space. Carilley Estate had the perfect location and structure to work with. We now have the most beautiful garden setting and an ideal location within the Valley, allowing us to build a quality destination for people to visit and enjoy our internationally recognised spirits and experiences.”
Scheduled to be opening in early June, the new Herne Hill venue will be joining a world-class array of producers in the region – including over 40 world class wineries, breweries, cideries and distilleries. With this in mind, Syme is already utilising wine barrels from neighbouring vineyards Kosovich Wines, Talijancich Wines and Olive Farm Wines: “We are looking for barrels which have produced quality wine and what better place to get that than our new neighbours in the Valley. We will use the flavours infused in the barrel, such as a delicious Verdelho, and draw them into the whisky or gin, imparting that unique flavour. Long term, we would like to do seasonal releases in line with winery releases. There are so many exciting times to come.”
Limeburners & Giniversity in the Valley is scheduled to open in June, and will be located at Hyem Road, Herne Hill. To check out what will be in store, head to the One Family, Three Distilleries website.
