A New Miami-Themed Cocktail Bar Is Opening In Northbridge This Friday
The corner of William St and Francis St has had a few restaurant/bar changes over the years ( RIP Panama Social 🙁 ), but we have high hopes for the newest tenants – Neon Palms!
The brainchild of owners Hayden Carter and Sasha Fagan, the idea was hatched after they met bartending at the Ritz-Carlton Perth.
During their COVID downtime, the duo mixed up a plan for a late night cocktail bar bringing neon lights and a playful energy to the Northbridge strip.
“The concept for Neon Palms was inspired by late-night bars we found on our travels,” says co-owner Carter. “We’ve created a space that says — drinks first.”
And after a soft launch last weekend, we have to say it’s looking fan-bloody-tastic so far, enlisting the help of local design crew Overtime Design for a unique – and playful – 80s edge.
Miami Vice meets Cocktail, if you will.
There’s bar tables, private booths, lounge seats and the venue’s summer secret weapon – the back courtyard lined up with astro turf, lush greenery, murals and a centrepiece Grecian statue.
“From big groups, to date nights, Neon Palms will be a great place to kick off, settle in or end your night,” says co-owner Fagan.
On the foodie front, they’ve enlisted Brazilian chef Marcelo Kretzer (Duenda, Bar Bizu) to add a dash of Latin American flavours like braised pork cubanos and Kingfish ceviche, along with his trademark handmade empanadas.

For the time being, Neon Palms will be operating as a bar/restaurant, with an eye towards becoming a proper late night destination (once their small bar license gets approved).
The drinks have been concocktailed by Carter, with an eye on the warmer months to get started.
Their signature drink sounds refreshing af, called the Vice City – a layered frozen cocktail equal parts blue and pink with rum, pineapple and lime.
