The Stables

Not many dining rooms come with their own cocktail bar! The Stables was one of Perth’s original horse stables from 1894, so the venue has historic charm and character. Attached to the original venue, is the recently renovated Little Stables, which houses a basement private dining room. This inner-city restaurant only reopened at the start of 2021 as part of the Parmelia Hilton Perth revamp. Inside the elegant restaurant is a private dining room that is separated from the main restaurant with a wall of brass chainmail. The modern menu is headed-up by the venue’s chef, Chad Miskiewicz, who has been at the hotel since 1998.
