Head Chef Seth James is an extraordinarily accomplished chef — being named WAGFG regional chef of the year in 2019. For the past eight years, his technically precise cooking made the restaurant at Wills Domain one of the state’s most talked about restaurants. During a three and a half year stint at Melbourne fine-dining institution Cutler & Co, he built a passion for exceptional and unusual produce, which he continues to explore at his new post, Frui Momento.
