Head Chef Shane Middleton joins forces with Frui Momento Head Chef Seth James to create a lavish menu, expertly paired with wines from the iconic WA winemaker, highlighting the stunning ‘Uovo’ amphora label.

Head Chef Seth James is an extraordinarily accomplished chef — being named WAGFG regional chef of the year in 2019. For the past eight years, his technically precise cooking made the restaurant at Wills Domain one of the state’s most talked about restaurants. During a three and a half year stint at Melbourne fine-dining institution Cutler & Co, he built a passion for exceptional and unusual produce, which he continues to explore at his new post, Frui Momento. The new restaurant shares fleur’s lust for life’s most tantalising indulgences – with stunningly fresh seafood and fine wine at the top of the list. It’s this mutual passion that promises to make this perfect collaboration so incredibly delicious.
