Perth’s king of cooking over fire, executive chef Stuart Laws of Brown Street Grill, will take over The Norfolk Hotel’s courtyard together with pit boss Alex Castiglia, formerly of Old Faithful Bar and BBQ, and Prendiville director of food, chef Russell Blaikie, riding shotgun to deliver a ‘charry’ feast of meats and vegetables from the fire to the plate on Thursday 29th June.
BBQ lovers will revel in an all-inclusive menu featuring meats smoked low and slow, slathered, roasted and baked in The Norfolk Hotel’s offset smoker using jarrah, grape and oak woods, or seared over flames in the custom-build BBQ and grill. Owner of The Norfolk Hotel business and Arlewood Estate, Garry Gosatti, will deliver farm-to-table authenticity with the dinner’s stand-out dish, a mouth-watering Wiltshire lamb, sourced from the Arlewood vineyard.
The dinner will also include a drinks menu featuring free-flowing premium wines from southside Margaret River institutions Flowstone and Arlewood. Stuart Pym will join Garry at the dinner to talk about his Flowstone wines.
