With the temperature rising and the sun shining, we’re gravitating towards the coast this summer – not just for ocean dips, but on our plates, too! 

And there’s nothing that says “summer” like the arrival of Albany Rock Oyster season, which runs from November to April when they’re harvested at their peak – and pair pretty darn nicely with a glass of Western Australian wine twinkling in the sunshine. 

Sustainably grown in the pristine waters of the Great Southern where the King and Kalgan Rivers join the icy waves of the Southern Ocean, the premium oyster’s unique flavour balances briny, oceanic flavours with grassy, watermelon and cucumber notes… Refreshing!

We’ve long extolled the Italian glamour of Shadow Wine Bar – so it makes total sense that they’re pairing their Albany Rock Oysters with a piquant, Calabrian-style hot sauce. And why not pair the heat with the refreshing fizz of Idée Fixe Blanc de Blanc? Cool, coastal Margaret River Chardonnay with notes of crunchy Granny Smith and lemon zest, floral orange blossom, and a delicate acidic minerality.

Shui

Subiaco’s Shui is known for expertly balancing flavours from across Asia and Australia, and their take on Albany Rock Oysters this season is no exception. Hidden amongst Northbridge’s patchwork of historic buildings, Fallow’s rooftop space is a bit of an underrated gem – and makes the perfect inner-city spot to down a couple of Albany Rock Oysters! Fallow are serving theirs up with a flavour-packed lacto-fermented rhubarb mignonette, which goes rather nicely with the notes of honeysuckle and green apple from Harewood Estate’s Mira Cuvée.

Jetty

Perched on Freo’s East Street jetty, the aptly-named Jetty is a natural choice for some premium seafood! Soak up the vitamin D, watch the boats go by and treat yourself to a plate of freshly shucked Albany Rock Oysters – pairing their briny deliciousness with Jetty’s Bloody Mary dressing. While a glass of prosecco goes down rather nicely, we’re dreaming of a couple of margs to sip alongside our Bloody Mary oysters.
