After winning a bevy of awards for their world-class spirits – as well as awards for their impressive kitchen, helmed by Head Chef Emily Jones – Republic of Fremantle knows all about meticulous dedication to craft.
Luckily for us, after a roaring success last year, they’re returning this winter with the second instalment of Artisans of the Republic – four collaborative dinners, with each menu celebrating a West Australian artisan, from the land to the sea and plenty in between.

Sustainable Seafood Soirée – Thursday 7 July (SOLD OUT) + Thursday 14 July
Ask any chef, and they’ll tell you: unless you’re catching it yourself, the best seafood is from Fins. Enjoy their fin-est (pardon the pun) catches over four delicious courses designed by Head Chef Emily Jones, each paired with a cocktail created by Republic of Fremantle Head Bartender, Max Giudice. Coffee Infused Dinner – Thursday 4 August (SOLD OUT) + Thursday 11 August
Stay up late on a school night with this creative coffee infused dining experience. Each of the four courses will utilise Offshoot Coffee’s excellent beans in unexpected ways – as will the four accompanying cocktails. Don’t worry, there might be an espresso martini in there, too… During your meal, you’ll also get the chance to hear all about the art of coffee roasting from Offshoot’s Head Roaster, Rummy Keshet. If you’ve eaten a mushroom in a Perth restaurant recently, chances are that it was grown by The Mushroom Guys. This dinner merges their moreish mushrooms to curate a menu inspired by the cuisine of Asia – accentuated by a selection of four cocktails designed to enhance the shroomy goodness.
